Basic vanilla cheesecake mix

It almost feels like cheating making this. I always think I should be adding some kind of chef’s touch or trick but there is really no need. The only ‘trick’ here is really leaning into the vanilla. Buy paste (or pods, if you like) and add a lot. It really needs to taste of vanilla - otherwise there’s just not a lot going on.

Ingredients:

  • 750g cream cheese
  • 1 tbsp vanilla paste
  • 75g icing sugar
  • 300g double cream

 

Method:

Whisk together 750g cream cheese, 1 tbsp vanilla paste, and 75g icing sugar until very smooth. Whip 300g double cream to soft peaks and fold it through the cream cheese mix.
